
Greek Style Eggs with Tomato and Feta Cheese is a perfect aromatic plate full of childhood memories for most of the Greeks. It is widely known as "strapatsada", but in some places you may also find it as "kagianas". It is a perfect food combination, since it has full nutritional value despite its rather poor need in materials.
Here are the Ingredients you will need for 2 persons:
- 2 large juicy tomatoes ( or 4 small/medium)
- 4 eggs
- sea salt
- fresh ground pepper
- 1 pinch of sugar
- half teaspoon thyme in olive oil
- half teaspoon oregano in olive oil
- 5-6 tablespoons extra virgin olive oil
- 2 tablespoons feta cheese, trimmed with your hand and ready for sprinkle
PREPARATION:
1) Chop finely the tomatoes and put them in a large pan with olive oil and a pinch of sugar on medium to high heat. Let them take a first boil and then lower the heat and let them dry from their juice.
2) Add salt, pepper, oregano and thyme and mix well.
3) Beat the eggs with a little bit of sea salt and pepper.
4) Pour them in your pan and mix them really well. Let them cook in low temperature for approx 2-3 minutes.
5) Sprinkle with feta cheese and enjoy!
This is also delicious to accompany with pita chips or fresh toast bread!
