PITA CHIPS RECIPE:
This recipe came from my Mom to rescue me when the bell rung one cold November night and three friends that were passing by my neighbourhood decided to knock my door.
I haven't prepared anything for dinner, but I always kept some spreads and pate in my food cupboard.
Well, this recipe is so very easy! Here are the ingredients you are going to need ( for 4 persons ). Keep in mind that I use as measure one tea cup. If you need more or less dough, just use a bigger/smaller cup or shot glass. You need equal parts of everything liquid.
INGREDIENTS:
One cup of extra virgin greek olive oil
One cup of Raki
One cup of water
Two cups of all-purpose flour ( the dough needs to be really soft and a bit moist - if needed add a little bit more flour)
Sea salt ( fleur-de-sel for me please!)
Freshly ground pepper
Oregano
PREPARATION:
You mix the liquids using only your bare hands, then you add a pinch of sea salt and finally you add really slow the flour until you have a soft and very slightly moistured dough.
Let your dough to rest for 15 minutes.
Then gently roll it and make it thin ( approx 3 mm thick) and cut your "fyllo" in small triangles.
Heat adequate olive oil in a pan and fry them until they become golden. If the dough was soft enough, the chips will blow and have bubbles of air.
Remove the chips and sprinkle them with salt, pepper and oregano.
