Broccoli Soup

Serves: 4

broccoli soup


500 gr. / 1 lb broccoli, I used frozen you can use fresh if you like
2 carrots
1 onion
1 garlic clove
1 medium potato
1.2 lt / 40.5 fl oz. vegetable stock
Olive oil for sautéing the vegetables and for sprinkling on top of the soup
100 gr. / 3.5 oz. goat cheese, grated
Croutons for topping
Instructions/ Εκτέλεση
1. In your multi purpose mini chopper chop the onion, garlic, potato and carrots.
2. Defrost the broccoli florets and wash them.
3. Take a deep pot and add about 5 tbsp of olive oil.
4. Sautee in medium heat the chopped vegetables.
5. Pour the stock, salt and pepper.
6. Boil for about 10 minutes.
7. Add the broccoli and continue to boil for another 10 to 15 minutes.
8. Remove from fire and place everything in your blender.
9. Very carefully start mashing them.
10. Return to the pot and taste to see if it needs more salt and pepper.
11. Remove from fire and serve, putting on top the grated cheese and the croutons.
