Throumba is a exquisite variety of black olives, where a specialized and unique way of drying is applied. Therefore it offers a particular taste, which is highly appreciated by skilled tasters. Black olives in comparison to green olives are richer in  tocopherols and are the only ones that contain beta-tocopheroles and alpha- tocotrienols. The quantity of salt  used reaches the ideal proportion that allows the maintenance of olive without making it especially salty. The amended nitrogen atmosphere applied during packaging, ensures that the olive is not compressed and keeps its moisture along with all the beneficial substances they contain. Thyme, coriander, anise, fennel and lemon combine according to a secret recipe given  by the monks of Mount Athos, turning these olives to an original, fine and delicious dining experience.
